Crème Caramel

The upcoming celebration is not the first of its kind...different flavor but similar consistency. Custard vs. Pudding: There is a saying, "If it has eggs it's custard, if it has starch it's pudding." Simple, yes. But all too often there is overlap in simplicity. It is the cream puddings that don't fit the mold since they use a custard base but are thickened with starch. For example, the pastry cream found in an éclair.
If that doesn't totally confuse you, then read on. It gets better...or worse dependent on how you interpret it.

Crème caramel, flan, or caramel pudding is a custard dessert with a layer of soft caramel on top, as opposed to crème brûlée, which is pudding with a hard caramel top.
