Alla Cacciatora

This post is late but the day isn't over yet. As with any foodie celebration, there seems to always be a gazillion recipes. Some classified as simple, others easy, many classic. There is still time to prepare dinner or even better go out for dinner since some of the ingredients for today's celebration may not be in your frig or pantry. Another option is to simply enjoy the dish tomorrow. Who says it has to be eaten solely on just one designated day?!

Easy Baked Chicken Cacciatore Recipe

What is this foodie known as cacciatore, cac·cia·to·re? It is a dish prepared in a spicy tomato sauce with mushrooms and herbs. Its origin is Italian, literally ‘hunter’ (because of the use of ingredients that a hunter might have at hand). In cuisine, alla cacciatora refers to a meal prepared "hunter-style" with onions, herbs, usually tomatoes, often bell peppers, and sometimes wine. Cacciatore is popularly made with braised chicken (pollo alla cacciatora) or rabbit (coniglio alla cacciatora).

In today’s world of low-fat, low-carb food, chicken cacciatore is actually a good dish. The cook can use non-stick cooking spray or a small amount of olive oil for browning, and boneless, skinless chicken breasts, and even skinless thighs are readily available in the supermarket. There are also lots of options for altering this recipe to the tastes of those who will be eating it.
