O-o-oh, Sweet Cookie!

The month of December is renown for its celebration of cookies! It begins with the first week being designated as Cookie Cutter Week during which is National Cookie Day. Of course, during this time are the Christmas holidays so cookies are at the top of the list for snacking and gift-giving. But, WHY mention Christmas at the beginning of summer? Because baking cookies or preparing recipes using cookies can be made ahead of time and frozen until ready to enjoy during the holidays. In doing so, all the prep time will be completed leaving more time for celebration with family and friends. Sounds like a good plan to me!

A very plain, simple cookie that is oh-so versatile...the chocolate wafer. The wafers can be crushed and made into a pie or cheesecake crust, layered in a cake with creamy filling between the layers, used as the top and bottom of ice cream sandwiches, chocolate dipped served on a stick, and so much more.
