This is not the first day of celebration for scallops, one of the most popular shellfish in the world. Will it be the best? That all depends on which recipe you prefer. Anything looks pretty in a scallop shell, especially scallops!
Don’t be wary of this day just for the fancy-pants name! It may be National Coquilles St. Jacques Day, but the term is just a fancy, French way to describe a particular way to cook scallops. There isn’t an official recipe for Coquilles St. Jacques, but all variations include serving a breaded, broiled scallop in a creamy wine sauce and presented classically on its own shell. In France, the coquille is a certain species of scallop, and for the dish to keep this name, it is the coquille and only the coquille that can be used.
