Facts on Shortbread
  • Shortbread is a type of leavened cookie simply made with flour, sugar and butter.
  • Shortbread is cut into points, oblong fingers or baked into individual rounds.
  • Shortbread is a cookie made for dipping due to its dryness.
  • Shortbread is a classic Scottish dessert that evolved from the typical medieval twice-baked biscuit
  • In some parts of Scotland, it is tradition to break shortbread over the head of a new bride.

Shortbread is not to be confused with shortcake. Shortbread is Scottish - delicious, buttery, crumbly goodness made as easy as 1, 2, 3. In actuality, there are only three key ingredients:
one part sugar, two parts butter, three parts white flour
Slightly less traditional recipes include such ingredients as chocolate chips or rice flour added to the mixture for taste or texture. It is an absolute delight with your favorite coffee, cup of tea, or simply on its own.
A Bit of Scottish Shortbread History...
The story of shortbread begins with the medieval "biscuit bread". Any leftover dough from bread making was dried out in a low oven until it hardened into a type of rusk: the word "biscuit" means "twice cooked". Gradually the yeast in the bread was replaced by butter, and biscuit bread developed into shortbread.
