Squash on the Horizon


With Autumn in the not so distant future, it is time to begin thinking about those delicious fall and winter recipes. Along with the welcomed cool temperatures will be accompaniments, such as pots of steaming soups and stews. And, don't forget the wonderful vegetables. In fact, it is one of the fall/winter vegetables that is on the horizon.

The sweet, orange flesh of roasted acorn squash begs for butter, brown sugar and cinnamon. Of course, the squash can also be steamed or sauteed and be just as appetizing. Named after its shape, this smaller gem of a squash is American all the way. Did you know it was once considered a staple of the Native American diet? And, while it may be considered a vegetable by many, did you know it is really a fruit? That's not all either! It shows up in the colder months but is a relative of the zucchini and crookneck, which are summer squash. 

Acorn squash is a great source of fiber and potassium, thus it is a heart healthy food. Even more so, it is so easy to prepare...cut it in half, scoop out the seeds and bake, roast, steam or sauteed 'til tender. Of course, you can always stuff it!
